Vegan Blondies

These are so good. I found this recipe looking on pinterest last night and had to make them asap. I remember when i was first vegan and i was trying to find brownie recipes and wow. I made one from a vegan brownie book with black beans and it was so disgusting. I never wanted to make a bean brownie recipe again. I had another recipe i use to make with avacados and it was pretty good. These are amazing. Everyone was suprised when i told them these are made with beans. They’re also vegan and gluten-free.

I could only add the beans, apple sauce and vanilla to my ninja. Then i transferred it to my mixer and added the rest of the ingredients.

Theres nothing i love more then brownies topped with icing and a dollop of vanilla yogurt.

Vegan Peanut Butter Blondies

Total Time 35 minutes
Servings: 12 blondies
Calories 193 calories

Ingredients:

·2 15 oz can chickpeas rinsed and drained
·1cup peanut butter
·1/3 cup applesauce

·1/4 cup raw cane sugar
·1 Tbsp almond milk or other vegan milk
·1 Tbsp vanilla
·1 tsp salt
·1 tsp baking powder
·1/2 tsp baking soda

·1/2 cup vegan chocolate chips or other chips

Feel free to more chocolate chips for the top.

Instructions:

·Preheat oven to 350 degrees F. Grease an 9 x 13 in glass baking dish and set aside.

·Put all ingredients except for chocolate chips into your blender or food processor.

·Blend until and smooth.

·Now, add the chocolate chips and mix again.

·Pour mixture into your baking dish and spread out evenly.

·Sprinkle a few more chocolate chips on top.

·Bake for 25-35 mintues until the edges are lightly browned, the top is set and slightly golden brown.

·Let cool for at least 15.

·Enjoy!

·Store in an airtight container in the refrigerator for 5 days.
